Across the prairies 6/23

I think everyone should travel across the country at some point in their lives, if they have the means to do so. I've been fortunate to have done it many ways—camping/hotel, fast,/slow, cheap/expensive. It gets you out of your social/geographic bubble, no matter what that bubble may be. The variations in the terrain (and cuisine!) are astonishing. It's a truly gorgeous country. People are generally incredibly friendly everywhere you go...even while the interstate and travel stops and towns are are generally filled with political signs with which I heartily disagree.

After a long travel day, we enjoyed a delightful dinner at Al's Oasis in Oacama, SD right next door to our hotel. The thing that reminded me—and started this rambling—about what a diverse nation we are was the salad bar. The salad bar (all you can eat!; heavily advertised) contained no leafy greens and no solitary fresh vegetables. It was a huge array of potato salad, egg salad, pasta salad, macaroni salad, chopped up meats, pickled vegetables. We have been so lucky to live in places that have such fresh and varied foods. I got spoiled.
